Sweet noodle sauce

Sweet noodle sauce (Chinese: 甜麵醬, also known as sweet bean sauce) is composed of grounded fermented yellow soybeans (that is, what is left of the soybeans after the fermentation of soybeans into soy sauce), flour, sugar, and salt. Similar to the better known hoisin sauce, it is used in Peking Duck and fried sauce noodles. It can be found in a typical Oriental market under different English names, but with a common Chinese name.

As an analogy, soy sauce is to the ancient Roman fish sauce garum as sweet noodle sauce is to the ancient Roman paste alec.
