Maltase

Maltase (EC 3.2.1.20 (http://ca.expasy.org/cgi-bin/nicezyme.pl?3.2.1.20))is one enzyme produced by the cells lining the small intestine to break down disaccharides.

In the small intestine the bond that holds two glucose molecules together cannot be split by amylase or other enzymes used to digest polysaccharides. Maltase is the enzyme that splits/hydrolyses maltose, malt sugar, into two separate α-glucose molecules.
